The Italians have made an art of slowing down and enjoying a long, mid-day meal. Participants learned the joy of a leisurely Italian style lunch. An afternoon starting with a spritz or two, followed by wine from Jon Schlegel of Attimo Wines from Piedmont, and a multi-course lunch prepared by Chef Matt Vawter of Boulder’s Rootstalk, ending with espressos and fernet.
